Live interviews create three hard problems.

Yes. The overlay is undetectable when you share: it is marked as protected content, so screen-capture and screen-share APIs exclude it from the stream. You see it on your display; the shared frame does not contain it. You still speak or type every answer. You can rename the app so it doesn't show under its real name in Activity Monitor (macOS) or Task Manager (Windows). This does not defeat proctoring.
